Heath Chocolate Chip Cheesecake

 I'm one of those individuals who could benefit from a Cream Cheese Anonymous group.  I currently have 26 packages on hand.  There was a good sale, okay?  And I use it alot.  In everything.  But the best place for it is in a cheesecake of course!  Here's one I made the other day for Sunday guests that I thought turned out to be quite irresistible.  Sorry if that sounded braggy.  But hey, see for yourself! :)

Heath Chocolate Chip Cheesecake

Crust:
crushed chocolate graham crackers (about one package)
1 stick butter or margarine

Filling:
3  8oz packages of cream cheese, softened
3 eggs
3/4 cup sugar
1 tsp vanilla extract
1 cup Heath English Toffee Bits (divided)
1 cup chocolate chips
  Crush chocolate graham crackers, add stick of butter and microwave until melted.  Press into the bottom of a spring form pan (you can use a regular 9x13 if you don't have one).  Bake at 350 for 10 minutes.  Meanwhile, mix together softened cream cheese, eggs, sugar, and vanilla.  Don't over beat, but just until smooth.  Stir in 3/4 cup of the heath bits.  Pour into partially cooled crust.  Sprinkle remaining heath bits and chocolate chips on top.  Bake at 400 degrees for 15 minutes, then turn your oven down to 350 and bake another 25 minutes or until center is just slightly jiggly.  Tastes best cooled and eaten the following day.  Cheesecakes are like men - they get better as they age. Ummmm...

  2. That's hysterical. That's a lot of cream cheese =o) But I have about 12 bags of Heath bits so I shouldn't talk. And these sound AMAZING!!!

  3. Love this! yum! And you must go through a lot of cream cheese, 24 bars? Do you freeze it? I have to say if I found a really, really good sale, I'd probably have that much, I only have 4 packages right now but I do probably have about 20 pounds of butter in the freezer, it was a really, really good sale too!
