Blackberry Jam Cheesecake

I have a very difficult time making a dessert that is chocolate free.  Seriously, what's the point of all those calories if it doesn't contain chocolate?!!!!  Perhaps one of the saddest things ever though, is that my mother-in-law cannot eat chocolate. I know, I think I'd be saying "shoot me now" if I got news like that!  (Calm down everyone, I'm pretty sure a chocolate-less world would be miserable, but not enough to make me suicidal....)  So for mother's day, I had "dessert duty" and since chocolate was out, I came up with this.  And even though it's cocoa free, it turned about pretty delish!

Blackberry Jam Cheesecake

graham cracker crust
3 eight oz boxes of cream cheese (softened)
3/4 cup sugar
3 eggs
1 tsp vanilla
1 jar blackberry jam

Directions:
Press crust onto bottom of greased spring form pan and bake at 350 for 10 minutes.  Meanwhile, mix together all other ingredients, except jam.  Pour half of cream cheese mixture over crust.  Spread half of the jam* over the cheesecake and then add the rest of the cream cheese mixture.  Drop the remainder of the jam by spoonfuls on top of the cream cheese mixture and drag a knife through it as shown below.  Bake for 10 minutes on 400 degrees and then another 20 minutes at 350 or until center is still slightly jiggly.  Serve chilled.

*You can substitute the blackberry jam for red raspberry jam, strawberry jam (however, I'm quite adamant about it being home-made not store bought junk!!), fudge sauce, peanut butter, etc.  Go crazy and be creative!!!!
