Guess you'll have to not let that one bother ya - cuz I can't fix it!
This was one of those meals where I had some spinach left in a bag, but not enough for us all to have a salad.... some chicken that had been marinading overnight... and a hungry family. It came together as I cooked and it's now a family favorite! Hope you enjoy it as much as we do. :)
2 tbls butter/margarine
Cut each chicken breast in half or thirds and marinade in honey Dijon Salad Dressing the night before. Then in a hot electric skillet, fry the chicken in olive oil, pouring all the extra marinade into the pan. Slice carrots and add them, letting them cook in the juices. In a separate pot, cook egg noodles according to directions. Meanwhile, melt butter and flour in a glass measuring cup. Add milk and stir well. Microwave until sauce thickens. Should take about 3 or 4 minutes, just make sure to stop and stir often so it doesn't boil over. Stir in the remaining ingredients. When chicken has been nicely browned and is a little crispy on each side (I do mine about 10 minutes each side but I might overdo it since I'm terrified of salmonella - been there, had that!) then dump in the drained noodles and pour sauce over top. Serve hot to hungry little children who will LOVE their spinach tonight! :)
There weren't many leftovers when our family was finished and we all fought over who got them for tomorrow's lunch. The hubby won. :)
