Layered Sausage And Spinach Casserole - Kid Approved!

 I had thawed some ground pork sausage and was planning on using it to make spaghetti.  But horrors, my stash of spaghetti noodles was out!  No good American mom ever lets that happen!  So I started brainstorming.... and noticing the bag of almost-gone spinach in the fridge, decided to go out on a limb and this casserole was born! (thought we eat raw spinach on a regular basis, I've never cooked the stuff in my life!)
Just to prove it to you before I hand it to you....  Here's my two year old taking a bite.
And score!  It's a winner!
 Layered Sausage and Spinach Casserole

Ingredients:


4 potatoes
1 1/2 lbs ground seasoned pork sausage
1-2 cups chopped raw spinach
2 tsp onion powder
salt, pepper, thyme
1 can cream of chicken
1 Tbls margarine/butter
1 1/2 cups shredded sharp cheddar cheese

Directions:

Slice potatoes into bite size pieces and boil until just tender.  I leave the skins on.  (Or skip the boiling and bake in microwave and then slice).
While potatoes are cooking, brown the ground sausage in bottom of casserole dish in the microwave and drain.
Use a chopper (hopefully you have yourself one of these handy dandy little contraptions!) and chop of the spinach in a seperate dish.  Add the onion powder, a good sprinkling of thyme, salt, and pepper.  Toss together with a fork as pictured below.



Spread the spinach mixture over the sausage, then add the potatoes.  Dot the margarine on the potatoes and sprinkle with lots of salt and pepper.  Lastly, spread cheese evenly over the top and bake at 350 degrees for half an hour.

When I served this the other night, my hubby looked rather concerned.  But after a few bites, smiled and said "Hey, this works!  Go ahead and blog it!"

****I think this would be great made in muffin tins for a fancy little brunch.  It tasted "breakfasty". :)

  2. I made this last weekend. I had 13 over for breakfast. I used hashbrowns instead and everyone loved it! I will definitely make this again. Thanks kammy for the recipe..
