Chocolate Oatmeal Muffins. This has tried my patience! My mom originally had the idea of adding cocoa to our already favorite oatmeal muffins but I just didn't think the result was all that to write home about. So I started coming up with my own concoctions, each time a batch came out, it just seemed to need a little tweaking. The third try was not a charm. I think it was the SIXTH recipe that I finally achieved the taste and texture I was going for! At about 14 muffins a pop, and six batches later, it's no wonder all my jeans are suddenly too tight! If you do the math... well shoot, thats a lot of muffins. So this is the first baking recipe I've written completely from scratch! I hope you like them. Afterall, they're chocolate - what's not to love?!
Kammy's Chocolate Oatmeal Muffins
3/4 cup milk
1/2 cup oil
3/4 cup sour cream
3/4 brown sugar
1 egg
1 Tablespoon baking powder
1 cup whole wheat flour
1 cup dry oatmeal
1/2 cup cocoa
1 cup semi sweet chocolate chips
Mix first five ingredients together in bowl. Stir remaining ingredients (all the dry ingredients) except chocolate chips together in a separate bowl and then add it to the first mixture, stirring only until moistened. Use muffin liners or grease muffin pan and fill each cup 3/4 full with batter. Sprinkle chocolate chips on top. Bake 12-15 minutes on 350. Makes about 15 muffins.
