S'mores Cheesecake Recipe {Happy National S'mores Day to you}

I promise.  I had NO IDEA there was such a thing as a National S'mores Day.  Philadelphia Cream Cheese just happened to be 99 cents this week so I stocked up.  Already having about 15 boxes in my fridge drawer and not being able to fit all the new ones in, I decided it was a good time to make up a new cheesecake recipe.   While my newest creation, the S'mores cheesecake, was in the oven baking, my sister called and said that tomorrow was National S'mores Day.  Somehow... my subconscious must have just known this....  I was making it to put in the freezer for some emergency some day, but since finding out about this special day, I decided if I had to blog it in a day, I would have to taste it to make sure it was blogworthy!  I have been on a crash diet this week and was doing soooooooo good too.  And now, I'm feeling rather ill.... for eating that whole piece....  ugh.  Why did I do it?  I'll have to do extra crunches tomorrow.

Okay, here's what you came for:

Kammy's S'mores Cheesecake

ingredients:

graham cracker crust (I just wing it with crushed crackers, a spoonful of flour and stick of butter)
3 8oz packages of cream cheese
3 eggs
3/4 cup brown sugar
2 cups broken up graham crackers (divided)
2 cups mini marshmallows (divided)
2 cups semi sweet chocolate chips (divided)

Preheat oven to 400.  Grease spring-form pan and bake graham cracker crust on the bottom for 10 minutes while oven is preheating.  Blend together softened cream cheese, eggs, and sugar.  Do not overblend.  Stir in one cup broken up graham crackers (see picture A), one cup mini marshmallows, and one cup chocolate chips. Pour mixture into crust.  Sprinkle remaining marshmallows, chocolate chips, and graham crackers on the top, using your finger to poke crackers into mixture slightly (see picture B).  Bake on 400 for 10 minutes, then turn down temperature to 350 and bake another 30 minutes, or until middle is just slightly wiggly and marshmallows are toasty brown.  Serve chilled with a huge grin on your face and be prepared to serve up seconds!!!

  2. Too funny. I found out at the last minute that today is National S'mores Day too and had to make something. I made s'more brownies and they are sinfully good too.   6. This will be the "happy birthday" cake I make for my 23 year old nephew this weekend. My nephews ALL love to camp and of course S'mores are a huge part of night life around the campfire. This one WILL be a winner! THANKS!!!
