I was looking for a pie recipe today that was rich with gooey-yumminess and nothing was jumping out at me... so I just started creating my own and I'm gonna reach back and pat my bony spine a little on this one cuz it's supposed to be for a party tonight but my family keeps snitching "little slivers" cuz it's so tasty and I had to make a second one! *Breath*. I jotted the recipe down while it was still fresh in my head (and in the pie plate) so ya'll can enjoy it too!
Kammy's Peanut Butter Oatmeal Pie
Ingredients:
graham cracker crust
first layer:
1/2 cup powdered sugar
1/4 cup packed brown sugar
1/2 cup peanut butter
3 Tbls milk
1 egg
1 8oz cream cheese
Second layer:
1 cup raw quick oats
1/2 cup brown sugar
1/2 cup flour
1 stick melted butter
pinch of salt
1/2 tsp salt
1 cup chocolate chips
Bake graham cracker crust in greased pie plate for 10 minutes. blend together all of the ingredients for the first layer and smooth over the baked crust. In a separate owl, stir together all of the ingredients for the second layer except the chocolate chips. When it is all completely moistened from the melted butter, stir in the chocolate chips. Spoon it over the peanut butter layer and smooth it out using the back of a fork, and lightly sliding it around the top until it is smooth (see photo below). Bake at 350 for 40 minutes. Eat warm or cool!
An after thought - caramel would
be AMAZING drizzled on top of this!!!
